Every peak day, a staffing puzzle.
Zoet of Zout sits on the harbour in Stellendam, between the fresh water of the Haringvliet and the salt of the North Sea, which is where its name comes from. It opens every day from 10:00, with a terrace that fills quickly in good weather and a play corner that makes it a natural stop for families. Demand rises and falls with the season and the forecast, so the busiest days are the hardest to plan for.
When extra shifts were filled at the last minute, the fixed team absorbed the gaps, and a full terrace became something to manage rather than enjoy. Before anything else could improve, the restaurant needed people it could count on: experienced staff ready to step in on the busiest days, without a scramble to find them. Reliable cover through the peak months had to come first.
What we did
Our approach, step by step.
01 · We covered the busy months
Zoet of Zout's busiest days follow the season and the weather: a full harbour, a full terrace and families stopping in from the marina, every day from 10:00. We started there, setting up a reliable pool of experienced Flexitt staff to fill the shifts the fixed team can't absorb on its own. When the forecast turns good or the summer peak arrives, extra hands are already lined up. The floor stays covered through the busiest months, and management no longer spends the morning of a sunny day looking for people.
02 · We became the group's partner
Once the cover was in place, the partnership stretched across the group. Zoet of Zout is part of Kingfisher Holding, and Flexitt is now the sole staffing partner for all of its restaurants: Zoet of Zout, Zoet of Zout Paviljoen, Villa Kakelbont and Thoms. The group works with one pool, one point of contact and one set of agreements instead of a separate supplier per venue, and staff can move between locations when a day calls for it. For Zoet of Zout, a busy weekend is now backed by the whole group's crew.
